Pumpkin Whoopie Pies

Fall weather has been here for a few weeks now and this year I have been trying so many pumpkin recipes, and loving them all, so I am excited to share another one with you today! This time its Pumpkin Whoopie Pies!
Just in case you aren't familiar with Whoopie Pies, I will explain them to you a little bit. Its simply taking two cookies and making a sandwich with them. The best part is they get rich creamy icing in the middle instead of vegetables. Mmm hmm... you heard right ;) They're so delicious!


Here's the recipe:

2 egg yolks (keep the whites for the icing)
2 c brown sugar
1 c coconut oil
1 t cloves
1 t cinnamon
1 t ginger
1 t salt
1 t baking soda
1 t vanilla
2 c cooked pumpkin
1 t baking powder
3 c flour

Instructions:

Preheat oven to 350*
Melt coconut oil. (regular vegetable oil can be used as well, I just prefer coconut oil)
Beat egg yolks, brown sugar, and coconut oil together until smooth.
Add rest of ingredients and mix well.
Drop by spoonsful onto cookie sheet and bake for 12 minutes.

Icing:

8 oz softened cream cheese
1 stick butter (softened)
2 beaten egg whites
3 t vanilla
6 T Milk
4 c powdered sugar
Cream together cream cheese and butter, add rest of ingredients and mix well. You want it to be kinda thick so it doesn’t squeeze out of the cookies when you’re eating them, so add powder sugar till the right consistency. Spread between cookies and wrap each cookie individually.
These are delicious to freeze and then about 30 minutes before you are ready to eat take them out of the freezer and let start to thaw. They are ahmazing with coffee!
