Yup I did it :) I had to incorporate the name Cheesecake in the title somehow! This is such a delicious creamy dessert it qualified for that name. Although the texture is nothing like a baked Cheesecake, I would say it has alot of the same ingredients and flavors as most cheesecake.
Quick, simple and delicious... Actually its my hubbys favorite dessert (anything with pineapples and cheesecake makes his day)
Here's the recipe:
Pineapple Delight (Cheesecake)
Crust:
2 c crushed graham crackers
1/2 c brown sugar
1 stick butter
Mix and press in bottom of 9 x 13 pan
Filling:
16 oz Cream cheese
4 c milk
2 boxes instant vanilla pudding
Put cream cheese and milk in blender and blend until smooth. Add instant vanilla pudding and blend for just a little bit until incorporated. Let set for a little bit until it starts to thicken just a little bit, pour over crust and let it set up.

Pineapple Topping:
In small pot, over medium heat, cook together:
1 can crushes pineapple
1/2 c water
3/4 c sugar
Keep stirred until it starts to boil,
while the above is heating, in a small bowl stir together
2-3 T Cleargel or Thermoflo
1/4 c water
Stir until there are no more lumps then slowly add into the boiling pineapple mixture, stirring as you add. This will work as a thickener. I like mine to be fairly thick so if it isn't as thick as you would like it to be simply mix together more clear gel and water and stir in. (Remember it will thicken a little bit more once it has cooled though)
Put pot in cold water and let filling cool off a bit then pour over Cream Cheese layer.
Refrigerate until ready to serve!

(It is important to mix cleargel and water together so it doesn't make a lumpy Pineapple filling)
