I love summer, mostly because I love to be near water as often as possible. The pool, the lake, the river and mostly the ocean. But autumn is my absolute favorite season. I love everything about it. And I cannot wait for autumn. I told my husband I wanted to put out my autumn decor`, you know, my pumpkins, leaves and scarecrows. Well, it was only August 4th, so he discouraged that telling me to wait. {smiles} But it is now August 20th so I think it is okay to share with you one of my favorite autumn recipes. {This is a repost}
Our family loves homemade pumpkin cookies. They are so yummy and so easy! I hope you enjoy these!
Our family loves homemade pumpkin cookies. They are so yummy and so easy! I hope you enjoy these!
2 1/2 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1 1/2 cups granulated sugar
1/2 cup (1 stick) butter, softened
1 cup (I use one full small can) Libby's 100% pure pumpkin
1 large egg
1 tsp vanilla extract
Heat oven to 350*
Combine flour, baking soda, baking powder, cinnamon, nutmeg and salt in medium bowl. Set aside.
Beat sugar and butter in large bowl until well blended. Beat in pumpkin, egg and vanilla until smooth. Gradually beat in flour mixture.
Drop by spoon onto baking sheets.

Bake roughly ten minutes or until edges are firm. Place on cooling rack to cool.
For glaze:
2 cups sifted powdered sugar
3 tbsp milk
1 tbsp melted butter
1 tsp vanilla
Mix all ingredients together until smooth. Pour into baggie (or decorator bag) and cut very small corner of baggie and drizzle over cooled cookies.
