I'm currently trying to eat healthier and fill my body with better nutrients, so I can have a greater chance of fighting breast cancer.

I'm not saying that I'll never have a treat now and then, however I'm being more intentional with what I choose to eat. One of my favorite meals of the day is breakfast, especially pancakes. The recipe below was given to me by an old friend, they are very delicious and a great healthy alternative.
Whole Wheat Bran and Buttermilk Pancakes
1 1/2 cups whole wheat flour
1 1/2 cups unbleached white flour
1/4 cup course oat bran
1/4 cup wheat bran
1/2 cup dark brown sugar
1 tsp. cinnamon
1 Tbls. baking soda
3 eggs
2-3 cups buttermilk
Directions:
Mix dry ingredients using whisk. Add in eggs and milk. Start with 2 cups milk and add more until desired consistency is reached. Mix well, drop by 1/4 cupfuls onto a non stick griddle. Add fresh fruit and enjoy! Makes 24 pancakes.
